A system for recovering heat from exhaust air generated from a cooking appliance having a combustion fume outlet and a cooking fume outlet, the system comprising:
- an exhaust hood configured for use over a cooking appliance to receive cooking fumes therefrom, the hood having filters opening to a filter plenum which is connected to an exhaust duct;
- the filter plenum supporting the filters on one side thereof and having an opening opposite a side of the plenum on which the filters are supported which opens, via a bypass opening, to a bypass plenum;
- the bypass plenum being configured with an inlet to allow connection to a combustion fume outlet of the cooking appliance;
- the bypass opening being defined by an adjustable member to allow the size of the bypass opening to be selected;
- a bypass heat exchanger disposed in a flow path of the bypass plenum and configured to circulate a heat-exchange fluid therethrough;
- and
- a circulating pump configured to circulate heat-exchange fluid through the bypass heat exchanger and through a further loop to a load or thermal storage device.
