Abstract
Acrylamide reducing agents are added to a sugar solution during the molasses making and sugar refining processes to maximize efficiency of the acrylamide reducing agents.
Claims11
A method of reducing the amount of acrylamide produced during the making of molasses, said method comprising the steps of:
- adding asparaginase to a clarified sugar solution to make a treated sugar solution;
- evaporating an amount of water from said treated sugar solution to produce a treated sugar syrup;
- and
- separating said sugar syrup into a raw sugar fraction and a molasses fraction.
1 more element
A method of reducing the amount of acrylamide produced during sugar refining, said method comprising the steps of:
- adding asparaginase to a mingled raw sugar solution;
- melting said raw sugar solution to produce a melted sugar solution;
- optionally clarifying said melted sugar solution to produce a clarified sugar solution;
- and
- separating said melted or clarified sugar solution into a refined sugar fraction and a molasses fraction.
