Abstract
Vegetable oils having a low level of glycidol esters are disclosed. Methods for reduction of the content of glycidol esters in edible oils are also disclosed.
Claims31
1-29. (canceled)
A composition comprising steam refined oil wherein the level of glycidyl esters is less than or equal to 1 ppm.
The method of claim 4, wherein the deodorizing the steam refined oil is carried out for not more than 15 minutes.
A method of converting glycidyl esters into monoacylglycerols comprising:
- mixing water into an oil;
- and,
- rebleaching the oil.
A method of removing glycidyl esters from an oil, comprising:
- at least one act selected from the group consisting of contacting the oil with an adsorbent, contacting the oil with an enzyme, deodorizing the steam refined oil with at least one sparge selected from the group consisting of ethanol sparge, carbon dioxide sparge, and nitrogen sparge, contacting the oil with an acid, rebleaching the oil, deodorizing the oil at a temperature of no greater than 240 degrees C., contacting the oil with an acid, and rebleaching the oil.
