Abstract
The present invention relates to improved bulk starter cultures and their use in the manufacture of fermented products. The present invention also relates to methods for making the improved bulk starter cultures.
Claims12
A method for preparing a mixed bulk starter culture, the method comprising the steps of:
- a) introducing at least two different concentrated Lactococcus lactin strains into a growth medium,
- b) incubating the obtained growth medium for less than ten hours to prepare a mixed bulk starter culture, and
- c) selecting a mixed bulk starter culture having an acidification activity of at least 1.45 ΔpH/2.5 h at 31° C.
