Abstract
Compounds represented by formula (I) wherein the symbols are as defined in the description, exhibit a lipase inhibitory activity, and are useful for foods, drinks, and the like.

A compound represented by formula (I)
- wherein:
- R1, R2, R3, R4, R5, and R6 may be the same or different and each is
- a hydrogen atom,
- a hydroxyl group,
- alkoxy group, or
- a sugar residue consisting of 1 or 2 sugars selected from the group consisting of glucose, rhamnose, fructose and galactose;
- ring A is a ring selected from the group consisting of the following formulas (II-a)-(II-i)
- wherein in formula (II-c),
- Rc is a group represented by the following formula
- wherein in formula (II-d),
- Rd is a group represented by the following formula
- wherein
- any one group of R7, R8 and R9 is a group represented by the formula:
- wherein R1, R2, R3, R4, R5 and R6 are as defined above, a group represented by the formula:
- wherein R1, R2, R3, R4, R5 and R6 are as defined above, or a group represented by the formula:
- and
- two groups of the remaining R7, R8 and R9 are hydroxyl groups;
- wherein the above-mentioned rings are each optionally condensed with the adjacent dioxane ring in any orientation.
A product, which is obtained by reacting one or more kinds of a flavonol compound with one or more kinds of a component selected from the group consisting of caffeic acid, gallic acid, chlorogenic acid, dicaffeoylquinic acid, catechin, gallocatechin, catechin gallate, and gallocatechin gallate in the presence of polyphenoloxydase.
A product, which is obtained by reacting one or more kinds of a flavonol compound represented by the formula (III)
- wherein R1, R2, R3, R4, R5, and R6 may be the same or different and each is
