Abstract
Disclosed is a separated fraction of a reaction product of an enzymatically catalyzed polymerization of a flavonoid. The separated fraction is highly resistant to oxidation and is useful in numerous applications such as an antioxidant in food products and medical applications.
Claims28
A fraction of a reaction product wherein said reaction product is produced by an enzymatic polymerization of a flavonoid, and said fraction is obtained by a separation of said reaction product into at least two fractions.
A separated fraction, said fraction being obtained by a fractionation of a polyepicatechin complex from an enzymatic polymerization by the process comprising:
- introducing said complex into an HPLC column;
- introducing a mobile phase into said column, said mobile phase comprising an organic solvent/water mixture;
- increasing the organic solvent concentration of the mobile phase as a function of time;
- and
- recovering the separated one or more fractions
- wherein the separated fraction has a retention time (“RT”) of at least about 0.94 minutes.
