Abstract
A foam comprising an aqueous or aqueous ethanolic solution of a surfactant, which is suitable for food use, and which has an HLB greater than 9; is used to form a foam topping on a drink or food, e.g. by spraying from a foam dispenser.

A foam for use as, or as a topping for or component of a food or drink, comprising an aqueous or aqueous ethanolic solution of at least one surfactant, which is suitable for food use, and which has an HLB above 9.
The use of an aqueous or aqueous ethanolic food grade surfactant, which has an HLB greater than 9, to make a foamed or foam-topped drink or food.
