Abstract
Disclosed are bitter alkaloid-containing consumables comprising bitter blockers for a reduced alkaloid-derived bitterness and methods of forming said consumables.
Claims16
A composition, comprising
- a) at least 10 mg/l of one or more bitter alkaloid optionally selected from caffeine, theobromine, and theophylline, and
- b) at least one bitter blocker of formula (1),
- wherein R1 is selected from the group consisting of OH and OCH3, and R2 is selected from the group consisting of H and OH, R1 and R2 comprise at least one OH group, and when R1 is OH then R2 is H, and when R1 is OCH3 then R2 is OH, and
- wherein the at least one bitter blocker has a concentration of 0.3 to 200 ppm.

A method of blocking bitterness in consumables the method comprising the step of admixing 0.3 ppm to 200 ppm of a bitter blocker of formula (1)
- wherein R1 is selected from the group consisting of OH and OCH3, and R2 is selected from the group consisting of H and OH, and R1 and R2 comprise at least one OH group,
- with a consumable or with a composition for a consumable that comprises at least 10 mg/l of a bitter alkaloid.
A method of reducing the bitterness of a bitter alkaloid, which method comprises the step of:
- including within a composition a bitter blocker of formula (1),
- wherein R1 is selected from the group consisting of OH and OCH3, and R2 is selected from the group consisting of H and OH, R1 and R2 comprise at least one OH group, and when R1 is OH then R2 is H, and when R1 is OCH3 then R2 is OH,
- in an amount effective in reducing the bitterness of the a bitter alkaloid.
