Abstract
Polynucleotides and polypeptides involved in the biosynthetic pathway of chlorogenic acids in the coffee plant are disclosed. Also disclosed are methods for using these polynucleotides and polypeptides for the manipulation of flavor, aroma, and other features of coffee beans, as well as for the protection of coffee plants against diseases or oxidative stress.
Claims41
A nucleic acid molecule isolated from coffee (Coffea spp.), having a coding sequence that encodes a phenylpropanoid pathway enzyme selected from hydroxycinnamoyl-CoA shikimate/quinate hydroxycinnamoyltransferase, hydroxycinnamoyl-CoA quinate hydroxycinnamoyltransferase, p-coumaroyl 3′ hydroxylase and caffeoyl-CoA 3-O methytransferase.

A method of modulating flavor or aroma of coffee beans, comprising modulating production or activity of one or more phenylpropanoid pathway enzymes within coffee seeds, wherein the phenylpropanoid pathway enzymes are selected from hydroxycinnamoyl-CoA shikimate/quinate hydroxycinnamoyltransferase, hydroxycinnamoyl-CoA quinate hydroxycinnamoyltransferase, p-coumaroyl 3′ hydroxylase and caffeoyl-CoA 3-O methytransferase.
