Abstract
Methods and systems for separating muscle tissue from connective tissue are provided, in which animal tissue containing both muscle tissue and connective tissue is subjected to stress, and muscle proteins are separated from the connective tissue. Slurries of separated myofibrillar protein are also provided.
Claims70
A method of separating muscle protein from connective tissue, the method comprising:
- (a) creating a slurry by placing animal tissue comprising muscle tissue and connective tissue in an aqueous solvent;
- (b) accelerating the slurry in a shearing environment;
- and
- (c) separating muscle protein from the connective tissue.
A method of processing protein, the method comprising:
- (a) separating muscle protein from animal tissue;
- and
- (b) subsequently solubilizing the protein, wherein at least 50% of the separated muscle protein remains undissolved during step (a).
A fluid composition comprising water and insoluble protein, wherein at least about 50% of the insoluble protein is in myofibrillar filament form and the fluid includes substantially no connective tissue.
A system for separating muscle protein from connective tissue, comprising:
- a first reservoir;
- a first pipe in fluid communication with the reservoir and comprising a constriction therein;
- a pump configured to pump fluid from the reservoir through the pipe;
- and
- a separation device in fluid communication with the first reservoir.
A method of adding protein to meat or fish, the method comprising:
- (a) creating a slurry by placing animal tissue including muscle tissue in an aqueous solvent;
- (b) accelerating the slurry in a shearing environment to reduce the particle size of muscle tissue;
- and
- (c) combining the slurry with the meat or fish.
