A food comprising a mutant gliadin protein that comprises at least one mutation in the epitope 62PQPQLPY68 (SEQ ID NO:6), wherein the mutation decreases the ability of the epitope to induce a T cell response, or a fragment of the mutant gliadin protein wherein the fragment is at least 15 amino acids long and comprises the mutated 62PQPQLPY68 (SEQ ID NO:6) is provided herein.

A protein comprising:
- a) a mutant gliadin protein with at least one mutation in the epitope 62PQPQLPY68, wherein the mutation decreases the ability of the epitope to induce a T cell or antibody response;
- or
- b) a fragment of the mutant protein of a), which fragment is at least 15 amino acids long and comprises the mutated PQPQLPY sequence.
A food comprising:
- a) a mutant gliadin protein that comprises at least one mutation in the epitope 62PQPQLPY68 (SEQ ID NO:6), wherein the mutation decreases the ability of the epitope to induce a T cell or antibody response;
- or
- b) a fragment of the mutant gliadin protein of a), wherein the fragment is at least 15 amino acids long and comprises the mutated 62PQPQLPY68 (SEQ ID NO:6).
