Abstract
A high pressure food package and system including a cup for holding a quantity of food product, a lid for covering the cup, and at least one one-way sealing mechanism that permits a gas to pass through the sealing mechanism into the interior space enclosed by the cup and lid and that prevents the gas from escaping from the interior space through the sealing mechanism. The high pressure package (and system and method for using the same) is especially well suited for producing a food product (such as fruits or vegetables) having an effervescent sensory (or carbonated) character.
Claims17
A high pressure food package comprising:
- a cup having a bottom and sides extending upward from said bottom to a rim, said rim defining an opening through which a quantity of food product may be received into an interior space of said cup, said opening of said cup being wide enough to allow finger access to pieces of non-liquid food product in said interior space;
- a lid capable of covering said opening and having threads capable of cooperative engagement with threads on said cup;
- and
- at least one one-way sealing mechanism that permits a gas to pass through said sealing mechanism into said interior space and that prevents said gas from escaping from said interior space through said sealing mechanism,
- wherein said high pressure food package is capable of retaining internal pressures of at least 35 psi,
- wherein said high pressure food package is capable of being held in one hand.
A method of using a high pressure food package comprising:
- filling an interior space of a hand-held sized bottle with a quantity of food product;
- loading a membrane liner and one-way membrane valve into a threaded cap;
- torquing said threaded cap onto cooperatively mating threads on said bottle to a predetermined force;
- sealing said membrane liner to the rim surfaces of said bottle;
- and
- filling said interior space with CO2 gas by injecting said gas through a nipple on said cap, said nipple having a hole therein aligned with a hole in said membrane liner and a gas pathway through said one-way membrane valve.
