Abstract
Described herein are food preservation compositions. The compositions are composed of an absorbent material and an antimicrobial agent. The antimicrobial agent can be a volatile, nonvolatile, or a combination thereof. The compositions are effective in reducing or preventing microbial growth in food storage articles.

A food preservation composition comprising an admixture of:
- (a) an absorbent material composition comprising (i) at least one water-absorbing polymer;
- (ii) at least one mineral composition;
- and (iii) at least one water-soluble salt comprising at least one trivalent cation;
- and
- (b) at least one volatile antimicrobial agent.

A food preservation composition comprising an admixture of:
- (a) an absorbent material composition comprising (i) at least one water-absorbing polymer;
- (ii) at least one mineral composition;
- and (iii) at least one water-soluble salt comprising at least one trivalent cation;
- and
- (b) at least one non-volatile antimicrobial agent, wherein the non-volatile antimicrobial agent comprises a sorbate salt.
