Abstract
A process for extracting gelatin from a marine invertebrate, comprising the steps of: 1) pre-treating a collagen-containing portion of the marine invertebrate with an alkali; and 2) extracting gelatin from the pre-treated collagen-containing portion with a weak acid solution at a temperature sufficient for conversion of collagen to gelatin to be effected.

A process for extracting gelatin from a marine invertebrate, comprising the steps of:
- 1) pre-treating a collagen-containing portion of the marine invertebrate with an alkali;
- and
- 2) extracting gelatin from the pre-treated collagen-containing portion with a weak acid solution at a temperature sufficient for conversion of collagen to gelatin to be effected.
