Food cooking surface for a kitchen utensil or cooking appliance, constituted by the surface of a compound fabricated starting from an alloy whose two principal components are zirconium and cobalt.

Food cooking surface for a kitchen utensil or cooking appliance, characterized in that this cooking surface is a compound fabricated starting from an alloy whose two principal components are zirconium and cobalt.
A method of forming a cooking surface composed of a ZrCoN or ZrCoCn alloy on a substrate, comprising:
- depositing a layer containing Zr and Co in proportions having a Zr/Co ratio of 0.5 to 2 on the substrate to provides good adhesion to the substrate and good thermal shock characteristics between the substrate and the layer;
- and nitriding or carbonitriding at least an upper surface stratum of the layer.
