Abstract
The present invention relates to an effective sterilization method including cooking and heating processes, which prevents the quality deterioration of rice and processed rice foodstuffs manufactured by heating processes.

A sterilization method for rice and processed rice foodstuffs including cooking and heating processes, wherein contact treatment of rice with an alkaline solution and immersion treatment in strong acid water are conducted before the cooking and heating processes.
