The present invention relates to the purification and characterisation of ascopyrone P synthase.

Ascopyrone P synthase in isolated or purified form or comprising at least one amino acid sequence selected from:
- (i) AINLPFSNWAX(or C)TI;
- and
- (ii) EYGRTFFTRYDYENVD.
Ascopyrone P synthase in isolated or purified form which has an optimim temperature range of 25 to 50° C.
A process for converting a compound of formula I into a compound of formula II
