Abstract
Method of preparing lettuce heads with tightly packed overlapping leaves of the iceberg type or vegetables of a similar structure, characterised in that the base of the sides (C) of the outer leaves (FE) is severed (II) from the head (TS), the top of the outer leaves (FE) is sliced off (III), the sides and the shreds (F′) of outer leaves (FE) thus cut are detached (IV) and the stalk (TS) is cut off (V) so that the central edible part (B, B1, B2) can be collected.

1) Method of preparing lettuce heads with tightly packed and overlapping leaves of the iceberg type or vegetables of a similar structure, characterised in that
- the base of the sides (C) of the outer leaves (FE) is severed (II) from the head (TS),
- the top of the outer leaves (FE) is sliced off (III),
- the sides and the shreds (F′) of outer leaves (FE) thus cut are detached (IV) and
- the stalk (TS) is cut off (V) so that the central edible part (B, B1, B2) can be collected.
