Abstract
An instrument for measuring reliably and instantaneously the chemical quality of cooking oil, and for distinguishing between colour changes due to chemical changes and colour changes due to the presence of minute size food particles in various oils.
Claims10
A device that measures fluorescent laser light scattering in various oils and correlates this fluorescence with oil degradation under specific oil usage conditions.
A device that measures elastic laser light scattering from various impurity particles that may enter the oil under specified usage conditions and distinguishes this elastic scattering front fluorescent scattering.
A device That exhibits and displays, in an easy to read manner, a dramatic increase in fluorescent laser light scattering from various oils (used under normal cooking conditions) when the polar component fraction of the oil exceeds about 25%.
