A process for preparing an alkoxypyrazine derivative of the formula:

- in which R1 denotes hydrogen, alkyl or aryl, R2 denotes hydrogen, alkyl, —CONH2, —COOR4, in which R4 denotes alkyl, or —C(NH)OR4, in which R4 is as defined above, and R3 denotes alkyl or aryl, comprising reacting a glyoxal derivative of the formula:
