Abstract
Provided are gelatin powders and gels derived from marine sources of collagen such as jellyfish. Also provided are methods for producing marine-derived gelatin powders. The marine-derived collagen source is hydrolyzed then dialyzed to at least partially demineralize the marine-derived collagen source.
Claims8
A method for producing marine-derived gelatin powders having a low Bloom strength of about 20 g to 75 g, consisting essentially of:
- soaking solids from a dried, salted marine-derived collagen source in citric acid for 10 min to 4.5 hours to open intact collagen molecules;
- draining excess liquid;
- homogenizing the marine-derived collagen source;
- hydrolyzing the entire marine-derived collagen source in a water bath to produce a liquid product comprising partially hydrolyzed collagen molecules;
- and
- dialyzing the liquid product with deionized water to at least partially demineralize the marine-derived collagen source to produce a dialyzed marine-derived collagen product with a reduced mineral content, where the liquid product is dialyzed against room temperature deionized water under agitation in a sealed dialysis membrane having a molecular weight cutoff of 6-8 kD, where the deionized water is replaced at intervals during dialysis.
