Abstract
The present invention relates to fermented beverages and methods of making the same.
Claims8
A process for the preparation of a fermented beverage comprising:
- a) providing a mixture comprising:
- i) aqueous vegetal base;
- ii) yeast;
- and
- iii) bacteria;
- b) fermenting the mixture to provide a fermented beverage having a pH of 5 or lower, 106-109 cfu/ml of said yeast, and 106-109 cfu/ml of said bacteria;
- c) removing a part of the yeast and bacteria to provide a fermented beverage comprising 103-105 cfu/ml of said yeast, and 103-105 cfu/ml of said bacteria;
- and
- d) packaging the fermented beverage.
