Abstract
Powder composition comprising. based on the total weight of the powder (i) 10-80 wt % of an oxidation sensitive edible oil, (ii) 5-30 wt % of at least one emulsifier selected from protein and starch, and (iii) 5-65 wt % galacto-oligosaccharide (GOS) and/or human milk oligosaccharide (HMO).
Claims19
A powder composition comprising, based on the total weight of the powder:
- 20-55 wt % of an oxidation sensitive edible oil encapsulated in a matrix comprising, based on the total weight of the power:
- 10-20 wt % of at least one emulsifier selected from protein and starch, and
- 20-60 wt % galacto-oligosaccharide (GOS) and/or one or more human milk oligosaccharides (HMOs).
