Abstract
The present invention provides methods of producing decolorized beet products and compositions produced therefrom. In some implementations, the decolorized beet product is decolorized beetroot juice.
Claims18
A purified beet juice composition comprising a beetroot liquid produced from a Beta vulgaris, Conditiva group, plant, wherein:
- red color of the beetroot liquid has been removed;
- the beet juice composition has a nitrate content of more than 1% nitrate as nitrate ion;
- and
- the beet juice composition has at least 90% light transparency.
