Abstract
Provided is an aquacultured crustacean having improved umami, uses thereof, and a method for producing the same. The crustacean does not burrow in sand, contain glycine and alanine, and has 2400 mg or more of free amino acids per 100 g of abdominal muscle. The content of glycine is 550 mg or more per 100 g of abdominal muscle, and the content of alanine is 140 mg or more per 100 g of abdominal muscle.
Claims11
An edible part of an aquacultured crustacean, wherein the aquacultured crustacean is a non-sand-burrowing crustacean having a glycine content of from 550 mg to 891 mg per 100 g of abdominal muscle, an alanine content of from 140 mg to 173 mg per 100 g of the abdominal muscle, and contents of total free amino acids of not less than 2400 mg per 100 g of the abdominal muscle,
- wherein the edible part comprises a muscle and a tissue surrounding a muscle, and optionally a surrounding shell,
- whereby the aquacultured crustacean is obtained by a method comprising:
- rearing a non-sand-burrowing crustacean in an aqueous environment using a floc comprising nitrifying bacteria for at least 43 days in a shading condition of an illuminance of not more than 100 lux at a central part of a tank, and
- obtaining the aquacultured crustacean after rearing under the shading condition,
- wherein the aquacultured crustacean belongs to the genus Litopenaeus.
