A method of hydrolyzing chlorogenic acid (CGA) in a sunflower seed-containing product comprising treating the sunflower seed-containing product with a CGA esterase of SEQ ID NO:
- 5 (Lactobacillus helveticus) and/or SEQ ID NO:
- 6 (Lactobacillus acidophilus).
