A process for obtaining an encapsulated composition comprising a plurality of core-shell microcapsules, wherein the core-shell microcapsules comprise a core and a shell surrounding the core, wherein the shell is formed by cross-linking of at least one protein with a first cross-linking agent, followed by the addition of at least one polysaccharide to form a complex coacervate.
