Abstract
The present invention relates to a wild-type, non-engineered, microbial lipolytic enzyme with a higher specificity for short-chain fatty acids than for medium to long fatty acids, specially long fatty acids. This invention further relates to a process for preparing a food product, and to the use of the wild-type, non-engineered, microbial lipolytic enzyme.
Claims10
A method for preparing a dairy product, comprising adding to a raw material or intermediate product of the dairy product a lipase or a host cell transformed to express a DNA sequence encoding a lipase, wherein the lipase
- comprises an amino acid sequence having at least 95% sequence identity to the amino acid sequence of SEQ ID NO:
- 1 or SEQ ID NO:
- 3, and wherein the lipase has a higher specificity towards release of C4-fatty acids as compared to release of one or more of C10-fatty acids, C8-fatty acids, C6-fatty acids, C12-fatty acids, C18:2-fatty acids, C14-fatty acids, C18:0-fatty acids, C18:1-fatty acids, C-fatty acids-C18:2-fatty acids, C10-fatty acids-C18:1-fatty acids, C12-fatty acids-C18:0-fatty acids, C14-fatty acids-C16:0-fatty acids, and C16-fatty acids-C18-fatty acids, when assessed in a dairy composition comprising milk fat.
