Abstract
The present invention includes compounds having structural formula (I), wherein R1-R9 are as defined herein, or salts or solvates thereof. These compounds are useful as sweet flavor modifiers. The present invention also includes compositions comprising the present compounds and methods of enhancing the sweet taste of compositions.
Claims14
A composition, comprising a bulking agent and one or more
- or a salt or solvate thereof;
- wherein
- R2, R3, and R4 are independently hydrogen, tetrahydrofuranyl, substituted tetrahydrofuranyl, tetrahydropyranyl, or substituted tetrahydropyranyl;
- and
- R5 is hydrogen, hydroxyl, alkoxy, or substituted alkoxy;
- and
- with the following provisos:
- (a) when R2, R3, and R5 are hydrogen;
- then R4 is not a moiety of 2-methyltetrahydro-2H-pyran-3,4,5-triol;
- and
- (b) at least one of R2, R3, R4 and R5 is not hydrogen:
- wherein the compound is not
An ingestible composition, comprising an ingestibly acceptable ingredient and one or more compounds having the structure of Formula (Ib):
- or a salt or solvate thereof;
- wherein
- R2, R3, and R4 are independently hydrogen, tetrahydrofuranyl, substituted tetrahydrofuranyl, tetrahydropyranyl, or substituted tetrahydropyranyl;
- and
- R5 is hydrogen, hydroxyl, alkoxy, or substituted alkoxy;
- and
- with the following provisos:
- (a) when R2, R3, and R5 are hydrogen;
- then R4 is not a moiety of 2-methyltetrahydro-2H-pyran-3,4,5-triol;
- and
- (b) at least one of R2, R3, R4 and R5 is not hydrogen:
- wherein the compound is not
A composition, comprising one or more compounds having the structure of Formula (Ib):
- or a salt or solvate thereof;
- wherein
- R2, R3, and R4 are independently hydrogen, tetrahydrofuranyl, substituted tetrahydrofuranyl, tetrahydropyranyl, or substituted tetrahydropyranyl;
- and
- R5 is hydrogen, hydroxyl, alkoxy, or substituted alkoxy;
- and
- with the following provisos:
- (a) when R2, R3, and R5 are hydrogen;
- then R4 is not a moiety of 2-methyltetrahydro-2H-pyran-3,4,5-triol;
- and
- (b) at least one of R2, R3, R4 and R5 is not hydrogen wherein the composition comprises greater than 50% by weight of the compound;
- wherein the compound is not
