Abstract
Foods are described that provide controlled release of stabilized bacteria into the oral cavity on consumption, as well as their use. Such foods promote colonization of oral surface by the bacteria. Bacteria are selected to treat an oral condition, such as oral disease, halitosis, and/or stained enamel on consumption of the food.
Claims13
A food substance comprising a plurality of stabilized bacterial inclusions distributed within the food substance, wherein each of the plurality of stabilized bacterial inclusions comprises a stabilized bacterial formulation, wherein the food substance is bounded by a protective shell that is ruptured upon chewing in a human mouth, and wherein the stabilized bacterial formulation comprises an isolated, non-pathogenic, hydrogen peroxide bacterial species or strain and a genetically modified LDH-deficient bacterial strain.
