Abstract
A flavor composition containing at least one, two, three, four, five or more peptide compound(s) that can be used to enhance the taste of edible compositions including sweet goods, such as confectionery goods, and savory goods, such as pet foods.
Claims15
A flavor composition comprising a peptide selected from the group consisting of:
- Phe-Leu/Ile, Leu/Ile-Val-Glu, Phe-Val-Asp, Val-Asp-Leu/Ile-Leu/Ile, Phe-Phe, Val-Phe-Val, Phe-Leu/Ile-Val, Leu/Ile-Leu/Ile-Gly, Phe-Leu/Ile-Gly, Phe-Asp-Val, Phe-Tyr, Leu/Ile-Val, Gln-Val-Leu, Glu-Val-Leu, Leu-Phe-Arg-Val, and combinations thereof;
- wherein the peptide is an acetate salt, a trifluoroacetate salt, or a formate salt.
