Abstract
The present invention relates to a composition comprising an oil phase, and particles of puffed maize kernel endosperm, dispersed in said oil phase, wherein upon sieving at least 80 wt % of said particles passes a sieve with apertures of 500μηι. The invention also provides a method to prepare such compositions and use of particles of puffed maize kernel endosperm to structure the oil phase of a composition comprising an oil phase.

Composition comprising an oil phase, and from 6 to 16 wt % particles of puffed maize kernel endosperm with respect to the weight of the oil phase, dispersed in said oil phase, wherein upon sieving at least 80 wt % of said particles passes a sieve with apertures of 500 μm, wherein not more than 35 wt % of said particles passes a sieve with apertures of 100 μm, and wherein the particles of puffed maize kernel endosperm structure the oil phase such that the composition has a Stevens value at 5° C. of 10 g or more.
