Abstract
The present invention relates to novel sulfoperoxycarboxylic acid compounds, and methods for making and using them. The sulfoperoxycarboxylic compounds of the invention are storage stable, water soluble and have low to no odor. Further, the compounds of the present invention can be formed from non-petroleum based renewable materials. The compounds of the present invention can be used as antimicrobials, and bleaching agents. The compounds of the present invention are also suitable for use as coupling agents.
Claims20
A method of reducing a population of a microorganism on a food processing surface, the method comprising:
- contacting the food processing surface with a composition comprising a sulfoperoxycarboxylic acid for a sufficient time to reduce the population of the microorganism on the food processing surface by at least about 50%;
- wherein the sulfoperoxycarboxylic acid is one or more of the following:
- or a salt thereof.
An antimicrobial composition for reducing a population of a microorganism on a food processing surface comprising:
- a composition comprising a sulfoperoxycarboxylic acid, wherein the sulfoperoxycarboxylic acid is one or more of the following:
- or a salt thereof;
- and
- b) one or more additional functional ingredients.
