Abstract
Disclosed are methods for separating non-soy plant materials to produce a fat-enriched fraction, a reduced-fat plant extract, reduced-fat plant protein compositions, a crude oil, plant gums, a degummed oil and a protein-fat sediment. Also disclosed are food products containing or prepared from the reduced-fat extracts, fat-enriched fraction, gums, oils, protein-fat sediments and reduced-fat protein compositions.

A reduced-fat non-soy plant extract consisting of 5% to 15% plant fat by weight, at least about 45% to 85% dry weight plant protein, and a plant protein to fat ratio of at least 7:1 based on the 5% to 15% plant fat by weight and at least about 45% to 85% dry weight plant protein, wherein the reduced-fat non-soy plant extract is free of hexane or alcohol, and wherein the reduced-fat non-soy plant extract is derived from a non-soy plant material.
A composition comprising a reduced-fat non-soy plant extract consisting of 5% to 15% plant fat by weight, at least about 45% to 85% dry weight plant protein, and a plant protein to fat ratio of at least 7:1 based on the 5% to 15% plant fat by weight and at least about 45% to 85% dry weight plant protein, wherein the composition is free of hexane or alcohol, wherein the non-soy plant extract is derived from a non-soy plant material.
A reduced-fat non-soy plant extract consisting of plant protein, plant fat, and a solvent, wherein the solvent consists essentially of an aqueous solution, wherein the reduced-fat non-soy plant extract has 5% to 15% plant fat by weight, at least about 45% to 85% dry weight plant protein, and a plant protein to fat ratio of at least 7:1 based on the 5% to 15% plant fat by weight and at least about 45% to 85% dry weight plant protein.
A reduced-fat non-soy plant extract consisting of 5% to 15% plant fat by weight, at least about 45% to 85% dry weight plant protein, and a plant protein to fat ratio of at least 3:1 based on the 5% to 15% plant fat by weight and at least about 45% to 85% dry weight plant protein, wherein the reduced-fat non-soy plant extract is free of hexane or alcohol, and wherein the non-soy plant extract is derived from non-soy plant material selected from the group consisting of canola, pumpkin, corn, sunflower, rice bran, and hemp.
