Abstract
Compositions wherein foodstuffs act as carriers of freeze-dried probiotics provide new means for administration of probiotics. The products that are easily shipped may be eaten as purchased or mixed with other ingredients to provide variety in the diet while administering beneficial probiotic organisms to the gastrointestinal tract.
Claims8
A composition, comprising:
- (a) pieces of freeze-dried foodstuff and (b) a coating layer consisting essentially of viable freeze-dried probiotic bacteria applied to said freeze-dried foodstuff and adhering to said pieces;
- wherein the probiotic bacteria are Pediococcus acidilactici NRRL B-50517.
A product produced by a process comprising (1) providing a solution or powder composition consisting essentially of viable freeze-dried probiotic bacteria;
- (2) mixing or coating at least one food selected from the group consisting of fruit, vegetable, meat, and nuts, with the freeze-dried probiotic bacteria solution or powder composition, and (3) without further processing, freeze-drying the at least one mixed or coated food to make the product, wherein the product comprises viable probiotic bacteria, wherein the probiotic bacteria are Pediococcus acidilactici NRRL B-50517.
