A consumable composition comprising a recombinant pepsin polypeptide and at least one consumable ingredient, wherein (a) the consumable composition is free from animal-derived proteins, (b) the recombinant pepsin polypeptide is in a proteolytically inactive form which does not self-digest, and (c) the recombinant pepsin polypeptide, when active, has a specific activity of from 500 FCC units/mg total protein to 50,000 FCC units/mg total protein.
