The present disclosure relates to a composition for producing tagatose comprising a protein having fructose-4-epimerase activity and a method for producing tagatose using the same.

A method for producing tagatose, the method consisting of contacting fructose with an isolated Caldilinea sp. tagatose-bisphosphate aldolase to convert the fructose into tagatose, wherein the isolated Caldilinea sp. tagatose-bisphosphate aldolase has fructose-4-epimerase activity.
