Abstract
Provided are a composition for producing tagatose, comprising fructose-4-epimerase, and a method of producing tagatose using the same.
Claims5
A method of producing tagatose, the method consisting of:
- contacting fructose with an isolated enzyme consisting of the amino acid sequence of SEQ ID NO:
- 3 or 5 to convert the fructose into tagatose,
- and separating or purifying the tagatose.
A method of producing tagatose, the method consisting of:
- contacting fructose with an isolated enzyme consisting of the amino acid sequence selected from the group consisting of SEQ ID NOs:
- 7, 9, and 11 to convert the fructose into tagatose,
- and separating or purifying the tagatose.
