A shelf stable pasteurized batter comprising a moisture source, a carbohydrate source, a leavening source, an emulsifier source;
- wherein the moisture source constitutes of said batter is about 20-39% by weight of the batter;
- wherein the leavening sources are acidic dicalcium phosphate dihydrate (DCPD) and basic leavening source;
- wherein the leavening sources of said batter are encapsulated.
