Abstract
The present invention relates to a novel emulsion structured in an isometric crystalline network of cellulose derivatives where the emulsion comprises Omega-3 fatty acids homogeneously distributed in the same. The emulsion of the invention has been designed to have greater stability, bioavailability and gastro-resistance and may be used in special medical foods, nutritional supplements, sports nutrition, enteral nutrition or child nutrition, amongst others.
Claims20
A composition which is an oil-in-water non-gelled emulsion at room temperature wherein the oil comprises Omega-3 fatty acids wherein the emulsion comprises at least 5% by weight of eicosapentaenoic acid (EPA) and/or docosahexaenoic acid (DHA) with respect to the total weight of the emulsion, and wherein said emulsion also comprises at least two cellulose derivatives which are bonded by means of hydrogen bridges forming a three-dimensional network in which the oil is distributed wherein the cellulose derivatives are selected from microcrystalline cellulose, sodium carboxymethyl cellulose, ethyl hydroxyethyl cellulose, hydroxypropyl methyl cellulose (HPMC), hydroxyethyl methyl cellulose, hydroxypropyl cellulose (HPC), hydroxyethyl cellulose, ethyl methyl cellulose, ethyl cellulose, and/or methyl cellulose, and at least one hydrophilic emulsifier.
