Also disclosed are compositions comprising thioesters produced by the methods disclosed herein.
Claims19
A method of flavouring cheese comprising adding to a cheese during its manufacture process at least one thioesterase enzyme comprising at least one of the amino acid sequences with at least 90% identity to SEQ ID NOS 2, 4, 6, or 8, and/or at least one isolated transfected host cell comprising at least one of the nucleotide sequences with at least 90% identity to SEQ ID NOS 1, 3, 5 or 7.
A method of obtaining a flavoured cheese product or a cheese flavoured product comprising adding to a cheese during its manufacture process at least one thioesterase enzyme comprising at least one of the amino acid sequences with at least 90% identity to SEQ ID NOS 2, 4, 6, or 8, and/or at least one isolated transfected host cell comprising at least one of the nucleotide sequences with at least 90% identity to SEQ ID NOS 1, 3, 5 or 7.
