Abstract
A taste and flavor profile modifying composition is described. The composition includes a blend of glucosylated steviol glycosides and residual steviol glycosides which can modify the intensity of a taste and/or flavor in a food or beverage product.
Claims9
A taste and flavor modifying composition, comprising:
- (a) at least 80% total steviol glycosides comprising a sum of glycosylated and non-glycosylated steviol glycosides, wherein:
- (i) the glycosylated steviol glycosides comprise short-chain glycosylated steviol glycosides having one to four or α-1,4-glucosyl residues;
- and
- (ii) the non-glycosylated steviol glycosides comprise an amount of residual steviol glycoside molecules comprising Rebaudioside A and having β-configured glucosyl residues;
- and
- (b) maltodextrin.
