Abstract
The invention relates to the fields of industrial microbiology and alcohol production including production of yeast products with features suitable for transport, storage, and utilization in fermentation.
Claims16
A method of producing a yeast product comprising:
- a) culturing a population of yeast in the presence of a carbon substrate, nitrogen substrate, and ethanol whereby the feed rate of carbon substrate and ethanol is ramped such that concentration of carbon substrate and ethanol maintains the growth rate of the population at less than μcrit and whereby the population reaches a cell density;
- b) ceasing the ramping of the feed rate whereby the concentration of carbon substrate, nitrogen substrate, and ethanol decreases over a period of time;
- and
- c) subjecting the population of yeast to a feed rate which is ramped down to less than half of the maximum feed rate of (a).
