Abstract
The invention relates to aspartic proteases, and particularly to aspartic proteases for plants. Disclosed are modified plant aspartic proteases, and methods for their manufacture, and uses thereof. Particularly contemplated are the uses of aspartic proteases in clotting milk.

A method for producing a plant aspartic protease, wherein the plant aspartic protease is a modified cardosin, the method comprising expressing, in a yeast cell or a fungal cell, a nucleic acid encoding
- (i) a polypeptide of SEQ ID NO:
- 1, or SEQ ID NO:
- 2;
- or
- (ii) a polypeptide having at least 95% sequence identity to SEQ ID NO:
- 1, or SEQ ID NO:
- 2, wherein the polypeptide encoded lacks a functional plant specific insert (PSI) domain.
